Broccoli and Carrot MAGIC - Your kids will no longer hate these vegetables


Even as an adult carrots and broccoli can only be so good. When your a kid and you hear vegetables you cringe. Well that will happen no more when you make either of these two recipes for your children for dinner!!


ROASTED GARLIC LEMON BROCCOLI - "DIRTY BROCCOLI"

ROASTED GARLIC LEMON BROCCOLI - "DIRTY BROCCOLI"

Ingredients

  • 2 Heads of Broccoli

  • 2 Teaspoons extra virgin olive oil

  • 1 Teaspoon Sea Salt

  • 1/2 teaspoon ground black pepper

  • 1 clove garlic, minced

  • 1/2 teaspoon lemon juice

Instructions

1. Preheat oven to 400 degrees

2. In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt, pepper, and garlic. Spread the broccoli out in a even layer on a baking sheet!

3. Bake in preheated oven until the broccoli is tender enough to peirce with a fork. (roughly 15-20 minutes)

4. OPTIONAL - sprinkle some lemon juice on top of the broccoli for a tangy taste


GARLIC PARMESAN BAKED CARROT FRIES

Ingredients

  • 2 carrots or 20 small baby carrots

  • 1 tablespoon oil

  • 1/4 cup Parmesan cheese

  • 1 tablespoon garlic powder

  • 1 teaspoon pepper

  • 1/4 cup fresh parsley, chopped up

  • 1/2 teaspoon of salt

DIPPING SAUCE INGREDIENTS

  • 2 tablespoons greek yogurt

  • 1 tablespoon lemon juice

  • 1/2 teaspoon garlic salt

  • 1 teaspoon pepper

Instructions

1. Preheat oven to 400 degrees

2. Slice top and bottom off of the carrots. Then slice them in half and then slice those halves into thirds lengthwise.

3. In a large bowl, mix ingredients with carrot sticks

4. Spread on Baking sheet

5. Bake for 15-20 minutes depending on how crispy you want. I personally do 25-30 minutes.

6. Allow to cool for 5 minutes.

DIPPING SAUCE INSTRUCTIONS

1. Mix together ingredients in a small bowl

2. Serve with your warm glorious carrot fries
